Discover Colomé Vineyards
Nestled in the breathtaking Calchaquí Valleys of Argentina, Bodega Colomé is home to one of the highest vineyards in the world. Established in 1831, the vineyard’s unique location close to the sun influences the grapes to develop thicker skins, resulting in deeper color, more intense aromas, and higher levels of antioxidants. The result is a vibrant and aromatic wine that captures the essence of its high-altitude terroir.
A Commitment to Sustainable Winemaking
At Colomé, sustainability and respect for the land are at the heart of everything they do. Maintaining the delicate balance between the health of their vines and production by using biological fertilizers and promoting biodiversity rather than relying on herbicides. Water is a precious resource in our high desert location, where all our irrigation comes from natural streams and snowmelt. Our hydroelectric system allows us to manage these resources efficiently, ensuring our vineyards thrive sustainably.

The evening will start at 6:30pm with food service commencing at 7pm. each dish will be paired with a specifically chosen wine to showcase the flavours brought to you by Colomé.
Our Host for the evening, Thibaut Delmotte has been Colome's winemaker since 2005. He is from France and graduated from Beaune, Burgundy. Before his arrival in Colomé, he worked five years in France, Burgundy, and Bordeaux.
In Burgundy, he achieved his great experience with respect to the land, he learnt to be able to understand and express it. He specialized in the most noble variety; Pinot Noir. In Bordeaux, he learned about the assemblages (blends), and how to blend a variety of wine maintaining the balance and adding more complexity to it. Different experiences yet complementary, they were to be key in his adaptation to the terroir of the Calchaquí Valleys.
